Every week until Thanksgiving, I am going to post recipes that you can use Canned Pumpkin in.
When you are buying canned pumpkin you will want to make sure that you are buying pure pumpkin and not pumpkin pie filling.
Pumpkin Corn Muffins
1 Cup Flour
1 Cup Cornmeal
1 ½ teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 egg
4 Tablespoons brown sugar
¾ cup Milk
2 tablespoons melted butter
1 Cup canned pumpkin
Heat oven to 375 degrees, add the muffin tins to your muffin pan.
Combine flour, cornmeal, baking powder, baking soda, and salt in a bowl.
Whisk together brown sugar, eggs, milk, butter and pumpkin.
Combine the two mixtures and mix until blended.
Fill muffin cups about ¾ full
