Garden Vegetables Meal | Healthy Eating Kids

This year is the first year that I have not had a garden in about 7 years.  Due to the choices that we have made with my family I was not able to grow a garden this year.  We have moved from our house in Utah and decided to find jobs up in Williston ND, because that is where all the jobs are according to the news.  We have been here for over a month and we have found out how hard it is to find a job in the oil business. We have taken jobs that we would normally not do.  I have taken a job as a server and my tips are really good each night.  My husband job offered a job at Loves Truck Stop which will open in November.  I have determined unless you have skills to work in the oil field you are going to have a hard time finding work up here in ND.

 

Since I have not garden that will produce the veggies that I love I have found a farmers that sells his garden vegetables on the side of the road.  We bought some red potatoes, onions, and fresh sweet corn on the cob.

 

I cut up the read potatoes into small chunks and boiled then.  Once they were done then I put them into a frying pan to fry them up.

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Then I put the corn in a large pot of water.

My kids have a hard time with onions so I fried them in a separate frying pan so that I could put them on top of my potatoes.

I went to a Market place called Reynolds Market and in the back of the store they have a clearance of Meat every week and this week we got ribs for 1/3 of the Regular price.  I put them in my crock pot and poured a bottle of BBQ sauce over them and let them cook for 8 hours.

I encourage everyone to grow their own veggies in a garden or if you are unable to do this then I also encourage you to visit your local farmers market and buy fresh veggies.  There is something about eating fresh veggies that make all the difference in the summer.
