Healthy Eating Kids | Garden Carrots

Over the next couple of week I am going to show how you can use your garden vegetable to make healthy meals. So for the next couple of weeks I will be showing what you can make with your carrots and potatoes from your garden.

I planted carrots in my garden this year but they did not make it. If you have carrots in your garden then you can go out and pick some to use, or you can go buy some at your local farmers market.

Healthy Eating Kids6 Large carrots, peeled
2 cloves garlic, finely chopped
¼ cup lemon juice
1 teaspoon salt
2 teaspoons ground cumin

In a large pot add water, and a little salt bring to a boil. Add the whole carrots and cook then for about 8 to 10 minutes.
You will want to drain and cut the carrots into slices you can make then as thick as you want.

Whisk together the rest of the ingredients. You will then add ¼ cup olive oil whisk until it is mixed well.

Healthy- Eating- KidsAdd the carrots to your bowl and drizzle the olive oil mixture over your carrots and serve as a side dish.
