Mardi Gras Southern Spinach Salad

1 Pound fresh spinach
1/4 Cup olive oil
2 Tablespoons vinegar
1 diced avocado
8 slices bacon
2 hard boiled eggs chopped
Pinch of sugar
Salt and pepper to taste

Wash and trim spinach, pat dry.

Combine Vinegar, oil, sugar, salt and pepper in a large bowl

Add Avocado into the same bowl and mix well

Fry your bacon until crisp, drain and reserve the drippings

Break the bacon into large pieces, tear you spinach into bite size pieces.

Add the bacon, spinach, and eggs into the bowl and toss spinach salad and serve immediately.
